Once again, it is time for a food post. Summer simply presents me with too many opportunities to cook 😀

A couple of weeks ago, I had a sudden urge to fry tomatoes. I wanted to taste thick slices of the rich red vegetable, feel velvety juice sliding down my throat… So I did what any modern person would do and googled recipes on the internet until I found one I liked. First, I rubbed my sliced tomatoes with salt and pepper and left them to marinate for about ten minutes. Then I borrowed my friend Eric’s bacon and heated it in a pan. I decided to be unhealthy and follow the recipe exactly. It said to fry the tomatoes in the bacon drippings, so that was exactly what I did.
Tomatoes turn a lovely golden brown when they’re heated, I learned. They tasted great both after I fried them a bit and before, when they had simply been rubbed with salt and pepper. Next time, I think I won’t use bacon grease. I’m sure oil will do just as well.

From way back when, we bought a 2-lb bag of carrots from Pavs. Now the rest carrots were about to go bad and no one was in the mood to eat another scrambled carrot-and-egg dish just yet. At a loss for what to do ("Go ahead and cook carrot soup if you want, but I just don’t feel like eating that either," my roommate said) we turned from savory to sweet for ideas.
We found a recipe from Food Network for carrot cake and decided to go with it. Eggs, sugar, sifted flower, oil, cinnamon, baking soda, and three cups of grated carrots all went into the mixing bowl…
The cakes turned out like this. We made one in a large round tin (I was so excited! I’d never made a round cake before!) and the rest of the batter went into cupcake molds. We couldn’t find a cupcake pan in the kitchens and so made do with triple-layering the cupcake paper and shoving it into the oven as quickly as we could. There was a crispy crust of golden-brown sugar on the edges of the cake, but it wasn’t burnt. It was delicious.
As tasty as it was fresh, however, we couldn’t resist frosting it. (It was the first time I’d ever frosted a cake too!)
This is a slice of our beautiful frosted carrot cake! Hands down, it seriously was the best cake I have ever eaten, storebought or homemade, excluding chocolate cake of course. Chocolate has its own competitive category, which we’ll save for another day perhaps…
Figure 3: Napa and Silken Eggs
Recently, a stainless steel pan came into my possession, as did one large napa. A napa is a vegetable similar to cabbage, but softer and finer-fibered. My mother usually cooks it in shitake mushrooms a base broth of meat or seafood, but since my roommate is vegetarian, I had to invent some kind of vegetable broth. With no mushrooms or meat to give it an umami flavor, I decided to try sizzling garlic in hot oil to release the flavor, then adding ginger and simmering for a few minutes with a bit of water. This yielded a vegetarian base that actually somewhat resembled my mother’s, because she would often use ginger to make napa too.
After washing and cutting up the leaves, I tossed the napa into the broth and added salt. Then I put the lid on and let the whole thing simmer for over twenty minutes. The recipe called this braised napa–fancy word!–but to me it was the same as simmering… In the meantime, I cooked another dish called hua dan. In Chinese, this means slippery egg. I beat the eggs and poured them into an oiled pan, adding some cornstarch dissolved in water to aid the slippery texture. When the eggs were almost done, I added chopped scallions for flavor. It turned out as a pretty yellow, white and green dish, not bad for my first time making it.
Dinner that night was very good: braised napa, hua dan, and some of my mom’s leftover green bean noodles cooked in shrimp juice served over hot white rice!
Tomorrow, I’m planning to make a variation on hua dan involving pork, as I don’t have any shrimp. We made a mulberry, apple, peach and vanilla yogurt fruit salad tonight, so desserts and fruit and sweet things are definitely not being neglected in this little household. Who knows what we’ll try next? Maybe brownie mix brownies…or, perhaps, lemon bars made from scratch? I do have a bunch of lemons lying around. And mangoes…
